I made banana wine once using dried bananas - from CJJ Berry's recipe. It was extremely strong and resembled somewhat of a port/sherry consistency. Good as it was ... it was extremely difficult to clear (it did eventually!). When using fresh fruit to add to your spirit, you need to consider the clearng procedure. There are certain fruits that are more difficult to clear than others. For example, berries such as sloes, blackberries, sloes, elder are very easy to clear. Stoned fruits such as plums are more difficult to clear. Any help?
