I think my Damson Gin may be too sweet

Post by jumping jack flash » 16 Oct 2007, 14:30

I've just made Damson Gin for the second year.

I have used a recipe of 3lbs damsons, 2lbs sugar and 1500ml gin.

I put in Le Parfait jars over a month ago.

I tested it last night and it tastes much sweeter than last years (I prefer it less syrupy).

Does the sweetness reduce over the next couple of months?

If not, do I need to add more gin now or am I just jumping the gun.

Cheers

Not sure.

I reckon that the longer you leave it, more of the damson will get into the gin which might reduce the sweetness.
If you add more gin, you will also reduce the taste of the damson, not just the sugar.

If it were me, i'd wait another month or two before altering the contents.

Let us all know how it turns out. :D

It's still too sweet. I think I'm going to do a test on a pint and see if it makes a difference.
