Have been tasting some of last years sloe gin and paxcharan, then discovered some damson rum from 2010...it's fab!
From our recipe book:
375ml rum (white)
130g molasses sugar
I think you could use dark rum and ordinary sugar, but the recipe above had a fab depth of flavour from the molasses sugar. Have considered using ordinary sugar and a dollop of black treacle as we've no molasses atm and they're similar.
What other spirits do you use for bottling fruit? Exchange recipe ideas here
