Haw Brandy.

Post by Gautama » 31 Aug 2009, 15:23

Has anyone tried making haw brandy?
There's a recipe for it in the River Cottage Preserves handbook (http://www.rivercottage.net/ShopProduct ... okNo2.aspx)
I'd never heard of it before. Given how prolific haws are I think I'll give it a try.
Any opinions? Any ideas of when is the best time to harvest haws?

Better late than never? I made some last year to this recipe:

Haw Brandy

450g haws
225g sugar
600ml brandy

1) Pour alcohol into bottle, followed by fruit then sugar. Give it a good shake until all ingredients are well mixed.

2) For the first week shake the bottle to stop the sugar settling to the bottom. After that shake on a weekly basis and taste after 8 weeks. Once it is ready for drinking filter through some kitchen paper/coffee filter. Enjoy!

It is a deep round taste, an autumnal flavour - worth a try. Pick haws at a similar time to blackberries.
