Were the elderberries soaked in the gin using the same methods as sloe gin (ie the fruit was 'raw')?
I make elderberry wine and have always boiled the fruit first - apparently if you don't boil then the wine ends up with an unpleasant taste. I don't know whether cooking the berries first would help. Cooking in a microwave might be ideal so you don't need to add water, so the resulting gin isn't diluted too much.

Exactly the same as sloe gin. I read just after doing the bottle that it is best to crush the Elderberriers.
