This year I made apricot brandy....great success! :lol:

I have huge amounts of apricot kernals left over which they shell here and eat as a snack.

I love Amaretto :wink: and have been searching for a recipe in which I can use these kernals...
Anyone out there ever done this or heard of this?

If I make it and it works..I will post whoever sends the recipe a bottle! :lol: :lol:

Liqueur de Noyaux D'Abricot - Apricot Kernel Liquor

Ingredients for approximately 1 litres (1 quarts) :

- 100 Apricot kernels

- 1 litre (1 quart) of fruit alcohol, 40º strength

- 600 g of sugar (1.3 pounds)

- 100 ml cognac (3.5 fluid ounces)

- 1 glass jar 1.5 litres (1.5 quarts) Jar should be sterile.

Preparation Time: 10 + 30 min Maturing Time: 5 months

Recipe:

- Remove the kernels (pits) from 100 apricots (the apricot flesh can be used in a cake, jam, or desserts)

- Place the kernels in the jar. Do NOT wash or clean the pits.

- Add the alcohol and sugar

- Leave the jar in the sun for 3 to 4 months

- After this filter the liquor (to remove any particles and sediment). Add the cognac to the liquor and then bottle

- Leave for another 2 months, for the liquor to mature. It is now ready to drink.


Found this recipe on the web. Never tried it thought... :?

I will try this and let you know how I get along.

I looked for a whole day and could not find a suitable recipe :oops:

I will look into sending you a bottle from here....other than that you could always come out to stay for the weekend...collect your bottle...and pick your Sloes!!! :idea: :wink:

Well a few bottles are now sitting on my window ledge....

I shall update in a 3/4 months...when I shall take a sneaky sip...and see if it is working. :lol: :lol:

Well I have made something ...but it tastes nothing like Amaretto.. :? :?

I removed the kernals today and took a sip....quite nutty in flavour...but not almondy at all....

Ah well ...I've added the Brandy and it tastes very nice indeed.
According to the recipe I am now supposed to wait another 2 months.....uummm
:? really need patience in this game...

Verdict- well I shall let the bottles sit the 2 months extra , though I can't see it doing anything myself...then I shall let you know......
