I normally use about 1/2 kilo per litre. Sugar is normally added at the start but I dislike the amount that many recipes call for and start off with around 3 desert spoons per litre initially and then add a little more at tasting sessions.

Definitely early then. The earliest I've ever found ripe ones has been early Sept. Must check on mine in the woods.

I know little of the scientifics...

I don't like it too sweet (some of the recipes must be so sickly) so I normally start with maybe a couple of dessert spoons of sugar in a litre and then nirmally add a little more after taste tests in a month or two.

If you don't find any and get desperate you can usually buy frozen ones from ebay that will be thawed and ready by the time they arrive.

Well, I've checked out my usual picking places here and there's bugger all fruit anywhere - this I saw maybe half a dozen Sloes and someone else has said the same.

One of my regular patches is close to a fairly main road. I always give them a soak for an hour before using and have never noticed any problems.

I usually start with a minimal amount and then add a little more later. Probably end up with around 3 desert spoons of sugar per litre/ Personally, I think most of the recommended amounts must taste like an awful, sticky gloop....

The real answer is to simply go with what works for you.

I'd have thought they'd be fine - I've used 2 year old ones before now.
