I usually pick mine in Sept/Oct as they go past their best up here after that, if we have not had a really good frost by the time I pick them I do freeze them, but then I freeze them anyway so that I have ample for next year if we have a poor harvest. so that was perfect Sloe Gin in 1 month by using a wine bag. doing the job again ready for Christmas, small bottle of Sloe Gin and some truffles make a lovely christmas pressy and not expensive for me :D

What I do to speed up the process is make the Sloe Gin in a wine bag, 2 bottles of Gin loads of sloes and sugar as recommended. Thing is because I get to squeeze the wine bag the fruit and gin infuse quicker and keep in the airing cupboard so the batch I have just started will be truffles by christm...

The Wine Bag has worked a treat :D

going to leave the bottles in my cupboard longer, but the wine bag has made a lovely bottle of sloe Gin and plenty of Sloes for truffles :D

Well I have just bottled up my sloe Gin made in the wine bag and yep it has worked a treat ... the fruit is all soft and broken up, had to filter it out through a tea towel, the Gin is clear and yummy and the sloes are pretty much prepared ready for the truffles :D I reccommend the Wine Bag method e...

I really like 70% cocoa solids choc, but some of my mates like the softy sweet white chock so i made all my truffles with dark stuff propper quality of course and then dipped a few in white choc for those who prefer it, that way they got the bitter then the sweet and were well happy :D
