Hi VJJ With regards to the colour, it was looking great from the 2nd day as all the damsons were slit open with a knife allowing the gin to penetrate. I will take you advice and experiment with small batches of gin while adding sugar and more Damsons to alternate batches. Cheers David

Thanks for the reply VJJ.

I am happy to let the Damson Gin sit for as long as it takes, however I was just trying to get ahead of the game instead of waiting 4 /5 months and then being advised that I should have added more sugur of Damsons. :wink:

Also purchased some jars from IKEA with the clear plastic seals and found that when cliping them closed they were not air tight. I then inserted some cardboard onto the wire closer to give a bit more leverage and that seems to have done the trick. I also ended up taking a rubber seal off one of the ...

I have read through this thread with interest as I had a similar situation the other day. Being my first season at this I was unsure what to expect when the Sloes came out of the freezer as I assumed that when they thawed they would all be split, however that was not the case. Not looking forward to...

I would be interested to find out if this works and if so, is it better with cheap whisky or does a good malt make a difference.
